Carolyn Elstad

Carolyn Elstad, 77, formerly of Mondovi and Independence, died on Sunday, January 31, 2016 at Lebanon Care Center, Lebanon, Ill. Carolyn was born May 28, 1938 in Chicago to Otto and Lucille (Braun) Miller. She married in 1958 to Louie Knopps of Menomonie. She later remarried in 1987 to Paul Elstad of Independence. Carolyn owned and operated Carolyn's Cafe in Mondovi and later Carolyn's Coffee Shop in Independence until retirement. Survivors include four children, Kathy (Mike) Zozakiewicz of Jackson, Wis., Steve (Amy) Knopps of Whitehall, Wis., David (Debbie) Knopps of White Bear Lake, Minn., and Daniel (Chu) Knopps of O'Fallon, Ill.; a sister, Eileen (Roland) Kurtz of Kewaskum, Wis.; 14 grandchildren and 15 great-grandchildren. Funeral services will be held at 7:30 p.m. Thursday at Edison Funeral Home, Independence, with burial in SS. Peter & Paul Cemetery on Friday.
